此時蘇格蘭的媽媽們對於珍貴的食材,自然要利用到極致。將保存不易且口感較差的羊雜(心肝脾肺腎甚至睪丸等)切細餡後,加入燕麥洋蔥香料等,以羊油拌炒,炒好的餡料裝入洗淨的羊胃袋中,以鹽水烹煮。煮熟後呈球狀,不但易於保存,且方便攜帶,戰士要出征或男人要上山去工作,就成為最好的營養補充劑,配上馬鈴薯泥及威士忌,就是一道正統的蘇格蘭饗宴。
而18世紀,蘇格蘭詩人Robert Burns 更是為其創作了不朽的詩歌!
